Recipes: Simple fruit cobbler

Fall is in the air, trees are changing colors and the leaves are floating to the ground. This means it is time for fall comfort foods and thoughts turn to things like pumpkin pie, apple crumble and candied yams. Just thinking about these scrumptious treats can make the mouth water and tummy grumble. 

Another favorite dessert that has come about in recent years is the cobbler. Cobblers are generally prepared with some variety of fruit and baked up with a golden brown breading. The following recipe was created out necessity (and desperation due to last minute guests), one Thanksgiving. 

Ingredients

1 Stick melted butter
1 cup flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1 cup sugar
3/4 cup milk
1/2 teaspoon cinnamon
Choice of canned fruit, do not drain the syrup.

Directions

Preheat oven to 400 degrees.

Mix all ingredients except fruit and cinnamon, set aside.

In a saucepan, bring fruit and cinnamon to a boil.

Pour fruit into a 1 1/2 quart baking dish.

Pour batter over fruit.

Bake uncovered for 25 minutes or until golden brown.

This recipe can easily be doubled or tripled if needed. This cobbler has been a tradition at the Thanksgiving table for over fifteen years (and counting). One of the unique features of this recipe is how moist the cobbler is when done. Many cobblers have a rather dry bread topping covering the fruit, in this recipe the batter is poured over the fruit instead of spooned on top of it. 

This delicious dessert is best served warm. For a little flare, serve with ice cream or whipped cream. The obvious fruit choices for a Thanksgiving cobbler include peach, apple, cherry and blackberry. However, do not let that stop you from experimenting with fruit cocktail, blueberries, pears, apricots and any other fruit you like. Have fun with this recipe and enjoy the fall season.
